Dry cottage cheese
Farmer cheese is a fresh, unaged cheese made by draining the whey from curdled milk.
It has a mild flavor and crumbly texture, similar to cottage cheese but drier and pressed into a solid form.
Common in Eastern European cooking, it appears in blintzes, pierogies, and baked dishes: She spread farmer cheese on her toast.
