rennin

Cheese-making enzyme

Rennin is an enzyme found in the stomach lining of young mammals, especially calves.

It curdles milk by coagulating the protein casein, allowing the infant to digest its mother's milk more slowly.

Extracted rennin (also called chymosin) is used in cheesemaking to separate curds from whey.

Most commercial cheese now uses microbial or genetically engineered substitutes.
