milk processing

Making dairy safe

Milk processing is the industrial treatment of raw milk to make it safe, extend its shelf life, and prepare it for consumption or further manufacture.

This includes pasteurization (heating to kill pathogens), homogenization (breaking up fat globules so cream doesn't separate), and sometimes fortification with vitamins.

Milk processing also encompasses separation into cream and skim milk, and conversion into products like cheese, butter, yogurt, and powdered milk.
