rennets

Cheese-making agents

Rennets is the plural of rennet, an enzyme preparation used to curdle milk in cheesemaking.

Traditionally extracted from the stomach lining of calves, rennet causes milk proteins to coagulate into curds.

Modern cheesemakers may use microbial or vegetable rennets as alternatives: The artisan cheese shop lists which rennets each variety uses.
