racking

Straining to breaking

Racking is the process of transferring wine, beer, or other liquids from one container to another, leaving sediment behind: After fermentation, we racked the wine into clean barrels.

In brewing and winemaking, repeated racking clarifies the liquid.

Separately, racking describes intense strain or torment—from the torture device—as in racking sobs or a racking cough.
