lees
Barrel bottom deposits
Lees are the sediment that settles at the bottom of a container of wine or other fermented liquid—the dregs left behind after the clearer liquid is drawn off.
Wine aged on its lees develops richer, more complex flavors.
By extension, lees can refer to any refuse or residue: the lees of society.
