potassium bitartrate

Winemaking acidic byproduct

Potassium bitartrate is a crystalline compound that forms naturally during winemaking, depositing as sediment in barrels and bottles.

In cooking it's called cream of tartar, used to stabilize egg whites and activate baking soda.

The crystals sometimes appear on corks or at the bottom of wine bottles, where they're harmless if unsightly.
