tartrate

Ester of acid

Tartrate is a salt or ester of tartaric acid, a compound found naturally in grapes and other fruits.

Cream of tartar (potassium bitartrate) is the most familiar tartrate, used in baking to stabilize egg whites and activate baking soda.

Tartrates also appear in winemaking, where they form harmless crystals on corks or at the bottom of bottles.
