pilaff

Spiced rice dish

Pilaff is a rice dish in which the grains are first browned in oil or butter, then simmered in seasoned broth.

The technique produces fluffy, separate grains rather than sticky clumps.

Originating in Middle Eastern and South Asian cuisines, it often includes meat, vegetables, or dried fruits: lamb pilaff with almonds and raisins.

Also spelled pilaf, pilau, or pilaw.
