lefse
Soft potato flatbread
Lefse is a traditional Norwegian flatbread made from potatoes, flour, and butter, rolled thin and cooked on a griddle.
Soft and pliable like a tortilla, it's typically spread with butter and sugar, then folded or rolled: Grandma always made lefse for Christmas.
The dish remains popular in Scandinavian-American communities, especially in the Upper Midwest.
