kalua

Underground oven style

Kalua is a traditional Hawaiian cooking method in which meat—typically a whole pig—is wrapped in banana or ti leaves and slow-roasted in an underground oven called an imu.

The result is tender, smoky, and slightly salty: kalua pork, kalua pig.

The technique is central to luaus and Hawaiian celebrations.

Often confused with the coffee liqueur Kahlúa.
