freeze drying
Vacuum ice removal
Freeze drying is a preservation method that removes moisture by freezing a substance and then reducing pressure so the ice sublimates directly into vapor, bypassing the liquid phase.
The process preserves structure and nutrients better than conventional drying: freeze-dried coffee, freeze-dried strawberries.
Used for food, pharmaceuticals, and biological specimens.
Also called lyophilization.
