canning

Sealing for storage

Canning is the process of preserving food by sealing it in airtight containers and heating to destroy microorganisms: She spent the weekend canning tomatoes from the garden.

Home canning uses glass jars with metal lids; commercial canning uses tin-plated steel cans.

The term extends to any large-scale firing or dismissal: The new CEO started canning employees on day one.
