sun drying
Curing by sunlight
Sun drying is preserving food by exposing it to direct sunlight, allowing heat and air circulation to remove moisture.
One of the oldest preservation methods, it works best in hot, dry climates: sun-dried tomatoes, sun-dried fish.
The process concentrates flavor and extends shelf life without refrigeration.
