spare ribs
Saucy pork rack
Spare ribs are a cut of pork from the belly side of the rib cage, with less meat than back ribs but more fat, making them flavorful when slow-cooked.
They're a staple of barbecue cuisine, typically smoked or grilled and served with sauce: We ordered a rack of spare ribs.
The name has nothing to do with "spare"—it comes from a German word for pickled pork.
