deveining

Removing digestive tract

Deveining is the process of removing the dark vein-like digestive tract from shrimp or prawns before cooking.

The "vein" runs along the curved back of the shellfish and, while not harmful to eat, can contain grit and is considered unappetizing.

Home cooks and professional kitchens routinely devein shrimp by making a shallow cut along the back and pulling out the tract with a knife tip or specialized tool.

I spent twenty minutes deveining two pounds of shrimp for the scampi.
