devein

Remove digestive tract

To devein is to remove the dark digestive tract from a shrimp or prawn before cooking.

The "vein" runs along the back and, while technically the intestine, is called a vein by convention.

Deveining is done for appearance and texture rather than safety: She deveined two pounds of shrimp for the scampi.
