deglazing

Lifting fond with liquid

Deglazing is a cooking technique where liquid is added to a hot pan to loosen the caramelized bits of food stuck to the bottom.

These browned remnants, called fond, contain concentrated flavor.

Wine, stock, or other liquids dissolve them into a sauce: Deglaze the pan with a splash of white wine.

The sizzling release of steam is part of the process.
