curdled milk
Lumpy gone-off cream
Curdled milk is milk that has separated into solid curds and liquid whey, either through souring or by adding an acid like lemon juice or vinegar.
The process occurs when proteins in the milk coagulate and clump together.
Intentional curdling produces cheese and other dairy products, but milk that curdles unintentionally—from age, heat, or mixing with acidic ingredients—is usually considered spoiled or unappetizing: The cream curdled in my hot coffee.
