cheese mold
Wheel-forming dairy vessel
Cheese mold refers to two distinct things.
A cheese mold is a container that shapes curds into a wheel or block during cheesemaking: Press the curds into the cheese mold and let them drain overnight.
Cheese mold also means the fungi deliberately cultivated in certain cheeses—the blue veins in Roquefort, the white rind on Brie—or unwanted mold that spoils cheese left too long.
