roquefort
Cave-aged blue cheese
Roquefort is a French blue cheese made from sheep's milk and aged in limestone caves near the town of Roquefort-sur-Soulzon.
The cheese has a tangy, sharp flavor with distinctive blue-green veins of mold running through its crumbly white interior.
It is one of the world's oldest and most celebrated blue cheeses, protected by French law that restricts use of the name to cheese produced in its traditional region.
The salad came with a creamy roquefort dressing.
