propionate
Mold inhibitor compound
Propionate is the salt or ester of propionic acid, a three-carbon fatty acid.
Propionates appear most commonly as food preservatives—calcium propionate and sodium propionate inhibit mold growth in bread and baked goods.
The term also appears in pharmaceutical contexts, where various propionate esters serve as drug formulations: fluticasone propionate, testosterone propionate.
