emmental
Hole-riddled cheese
Emmental is a mild Swiss cheese with characteristic large holes formed by gas bubbles during aging.
The pale yellow cheese has a slightly nutty, buttery flavor and melts well, making it popular in fondue and sandwiches.
Named for the Emme Valley in Switzerland, it's sometimes spelled emmenthal or called Swiss cheese generically: a slice of emmental on rye. (Capitalized Emmental refers to the Swiss region.)
