portobello

Large brown cap

A portobello is a large, mature cremini mushroom with a broad, flat cap and dense, meaty texture.

Portobellos are often grilled or roasted whole and served as a vegetarian main course: a portobello burger, stuffed portobellos.

The name emerged in the 1980s as a marketing term for what had been common brown mushrooms.

Also spelled portabella or portabello.
