cremini

Immature portobello fungus

Cremini mushrooms are brown-capped cultivated mushrooms, the same species as white button mushrooms but harvested at a slightly more mature stage.

They have a firmer texture and earthier flavor than their white counterparts.

Left to mature further, creminis become portobello mushrooms.

Also spelled crimini.
