morels

Honeycomb-capped fungi

Morels are prized edible mushrooms with distinctive honeycomb-textured caps, hollow inside and ranging from tan to dark brown.

They grow wild in spring, often near dead or dying trees, and are difficult to cultivate commercially—making them expensive.

Foragers hunt them eagerly: We found a patch of morels near the old apple orchard.

The flavor is earthy and nutty, intensifying when dried.
