porcini

Prized edible fungus

Porcini are prized edible mushrooms with meaty brown caps and thick white stems, native to forests across Europe and North America.

The name comes from Italian for "little pigs," perhaps reflecting their plump shape or the enthusiasm with which they're hunted.

Porcini appear frequently in Italian cuisine, dried or fresh, lending an earthy, nutty depth to risottos, pastas, and sauces.

I rehydrated some dried porcini for the soup.
