pizza stone

Oven's hot slab

A pizza stone is a flat, thick slab of ceramic, cordierite, or other heat-retaining material placed in an oven to simulate the floor of a brick pizza oven.

The stone absorbs and radiates intense, even heat, producing a crisp crust: Preheat the pizza stone for at least thirty minutes before sliding the dough onto it.
