stoneground
Crushed between rocks
Stoneground describes grain, especially wheat or corn, that has been milled between traditional millstones rather than modern steel rollers.
The process produces coarser flour that retains more of the grain's natural oils and nutrients: stoneground whole wheat bread.
The term appears most often on artisanal food packaging to signal traditional methods.
