persimmons

Astringent autumn fruits

Persimmons are orange-colored fruits from trees of the genus Diospyros, prized for their sweet, honey-like flavor when fully ripe.

The most common varieties are the Hachiya, which must be eaten very soft to avoid astringent bitterness, and the Fuyu, which can be eaten firm like an apple.

The persimmons from our tree ripen in late autumn.

They appear in Asian cuisines and American fall desserts alike.
