nutmeat
Edible walnut center
Nutmeat is the edible kernel inside a nut's shell—the part you eat after cracking a walnut, pecan, or almond.
The term distinguishes the food portion from the inedible shell: She picked the nutmeats from the bowl of cracked walnuts.
Recipes sometimes specify nutmeats to clarify that shelled nuts are required.
