injera

Spongy teff flatbread

Injera is a spongy, slightly sour flatbread central to Ethiopian and Eritrean cuisine.

Made from fermented teff flour, it has a distinctive porous texture that comes from the bubbles formed during fermentation.

Injera serves as both plate and utensil—dishes are placed on top, and diners tear off pieces to scoop up food: We shared a platter of stews served on injera.
