ice wine
Sweet frost vintage
Ice wine is a sweet dessert wine made from grapes that have frozen naturally on the vine.
The freezing concentrates the sugars and acids, producing an intensely flavored wine.
Harvesting happens in winter, often at night, when temperatures drop low enough.
The yield is small and labor-intensive, making ice wine expensive: a half-bottle of Canadian ice wine.
Germany and Canada are the principal producers.
