hot-pot
Communal broth cooking
Hot-pot is a communal cooking method where diners cook raw ingredients in a shared pot of simmering broth at the table.
The dish originated in China and appears across East Asian cuisines with regional variations.
Diners select meats, vegetables, noodles, and dumplings from platters, briefly cooking each piece before eating.
The broth intensifies as the meal progresses.
Also spelled hotpot.
