gratinating
Broiling cheese topping
Gratinating is cooking food under high heat to form a browned, crispy top layer—typically of cheese, breadcrumbs, or both.
The technique finishes dishes like casseroles and French onion soup: The potatoes are almost done gratinating.
The result is called a gratin.
