fogey

Set in ways

A fogey is someone with old-fashioned attitudes, resistant to change or new ideas.

Usually appears as old fogey, though the "old" is nearly redundant—fogey already implies someone set in their ways: Don't be such a fogey; try the new restaurant.

The word is mildly dismissive rather than deeply insulting.

Also spelled fogy.
