dulce de leche

Argentine milk confection

Dulce de leche is a thick, sweet caramel-like spread made by slowly cooking sweetened milk until it turns golden brown.

The Spanish name means "sweet of milk." It originates in Latin America and appears in desserts, pastries, and as a topping: The alfajores were filled with dulce de leche.

It differs from caramel in that the milk caramelizes rather than sugar alone.
