century egg

Chinese cured egg

A century egg is a Chinese preserved egg, typically from a duck, that has been cured for weeks or months in a mixture of clay, ash, salt, and alkaline materials.

The process transforms the egg dramatically: the white becomes a translucent dark brown jelly, the yolk turns creamy and greenish-gray, and the flavor becomes intensely savory with ammonia notes.

Despite the name, the preservation takes weeks, not centuries.

Also called hundred-year egg, thousand-year egg, or preserved egg.
