Broken rice is rice grains that have fractured during milling or processing.
Once considered inferior and sold cheaply, it's now valued in certain cuisines—Vietnamese cơm tấm features it prominently, and it's preferred for congee and some West African dishes because the smaller pieces cook faster and absorb flavors differently than whole grains.
