bolognaise

Tomato meat sauce

Bolognaise is a meat sauce for pasta, originating from Bologna, Italy.

The authentic version (ragù alla bolognese) is a slow-cooked mixture of ground meat, tomatoes, wine, and aromatics, traditionally served with tagliatelle.

Outside Italy, bolognaise typically means any tomato-meat sauce served over spaghetti: spaghetti bolognaise.

Also spelled bolognese.
