basil pesto

Genovese pasta sauce

Basil pesto is a sauce of crushed basil, garlic, pine nuts, Parmesan cheese, and olive oil, originating from Genoa, Italy.

It's traditionally made with a mortar and pestle—pesto comes from the Italian for "pounded." The sauce is tossed with pasta, spread on sandwiches, or used as a dip: I added a dollop of basil pesto to the soup.
