squid ink
Black pasta colorant
Squid ink is the dark fluid cephalopods release to cloud water and evade predators.
In cooking, it's harvested from squid or cuttlefish and used to color and flavor pasta, rice, and sauces, lending a briny, subtly oceanic taste: squid ink risotto, squid ink pasta.
The ink produces a dramatic black color prized in Mediterranean and Japanese cuisine.
