tyramine

Aged food amine

Tyramine is an organic compound found naturally in aged and fermented foods—cheese, wine, cured meats, soy sauce.

The body normally breaks it down, but certain medications (especially MAO inhibitors) block this process, allowing tyramine to accumulate and cause dangerous spikes in blood pressure.

People on these medications must follow a low-tyramine diet.
