A supertaster is someone with an unusually high number of taste buds, making them exceptionally sensitive to flavors—particularly bitter compounds.
Supertasters often find foods like broccoli, coffee, or grapefruit unpleasantly intense.
The term comes from genetics research but has spread into food writing and casual conversation: I'm a supertaster, so I can't stand IPAs.
