springhouses

Water-chilled food storage

Springhouses are small structures built over natural springs to keep food cool before refrigeration.

The constant cold water and cool air inside preserved milk, butter, and other perishables.

They were common on American farms through the 19th century: The old springhouse still stands behind the farmhouse.

Singular: springhouse.
