root cellars
Subterranean vegetable storage
Root cellars are underground or partially buried storage spaces designed to keep vegetables, fruits, and other perishables cool and humid through natural insulation.
Before refrigeration, they were essential for preserving root crops like potatoes, carrots, and beets through winter.
The earth maintains a stable temperature year-round, preventing freezing while slowing spoilage.
Some homesteaders still use them today.
