A salmon steak is a crosswise cut through the body of a salmon, typically an inch or two thick, including the backbone and skin.
Unlike fillets, which are cut parallel to the spine, steaks retain the bone and create a roughly oval shape: Grill the salmon steaks about four minutes per side.
