sabayon

Whipped egg dessert

Sabayon is a light, foamy dessert sauce made by whisking egg yolks with sugar and wine over gentle heat until thick and frothy.

The classic version uses Marsala wine and is served warm over fruit or cake.

Italian zabaglione is the same preparation.

The technique requires constant whisking to prevent curdling: The sabayon broke because the heat was too high.
