parathas

Flaky layered bread

Parathas are Indian flatbreads made from whole wheat flour, cooked on a griddle with oil or ghee.

Unlike plain rotis, parathas are typically layered or stuffed—folded and rolled to create flaky sheets, or filled with spiced potatoes, cauliflower, or paneer.

They're a staple of North Indian cuisine, often eaten for breakfast with yogurt, pickle, or butter: We ordered aloo parathas with mango lassi.
