Crunchy caramel candy
Nougatine is a confection made from caramelized sugar and nuts, typically almonds or hazelnuts, cooked until brittle.
It can be molded while warm into decorative shapes for pastry work or crushed and folded into fillings, icings, and ice creams.
Unlike soft nougat, nougatine hardens completely as it cools.
